"Breaded" Broccoli and Cauliflower

This is hands down the most delicious form of cauliflower and broccoli! Seriously, make these for any veggie hater in your life and dare them to try these and tell you they're not amazing. I've given it to a few broccoli-haters in my life (both adults and kids) and they've gobbled these up. Fried broccoli and cauliflower is obviously delicious, but the recipe includes processed bread crumbs and inflammatory oils. My recipe is oil free and uses bread crumbs made with healthy fats and natural spices to give a good crunch and great flavor without compromising your health.


Ingredients:

  • 1 small head cauliflower, chopped into small florets

  • 1 small head broccoli, chopped into small florets

  • 2 eggs, beaten

  • 1 cup almond flour

  • 1 tsp salt

  • 1 tsp pepper

  • 1 tsp garlic powder

  • 1 tsp paprika


Instructions

  1. Preheat oven to 190°C or 375°F on the convection setting.

  2. Chop broccoli and cauliflower into small pieces. Place in a large bowl.

  3. Crack eggs in a small bowl and beat with a fork.

  4. Pour egg mixture over the broccoli and cauliflower and toss to get each piece coated in egg wash.

  5. Sprinkle breadcrumb mixture over the veggies. Toss and sprinkle on both sides.

  6. Place on a baking sheet lined with parchment paper.

  7. Bake for 30 minutes, or until golden and crispy.

  8. Enjoy!
