Peanut Butter Chocolate Chip Cookies

These cookies are sneakily high in fiber and protein thanks to their secret ingredient: chickpeas (you don't taste them, I promise!) These are so simple to make with just 6 ingredients, and they can technically be eaten raw since there's no egg or flour, although I prefer them baked.


Ingredients:

  • 1 (15-ounce) can chickpeas, drained and rinsed

  • 2/3 cup creamy peanut butter stirred

  • 1/4 cup coconut sugar

  • 1/2 tsp vanilla

  • 1 1/4 tsp baking powder

  • 1 pinch sea salt

  • 1/3 cup chocolate chips or chocolate chunks


Instructions:

  1. Preheat the oven to 350°F or 180°C.

  2. Drain the chickpeas and rinse them under cold water.

  3. Add the chickpeas, peanut butter, coconut sugar, vanilla, baking powder, and sea salt to a food processor fitted with the S blade.

  4. Process until all of the ingredients combine to form the dough.

  5. Stir in the chocolate chips.

  6. Shape the dough into cookies by rolling a 1-inch ball with you hands and then pressing it flat (the cookies won't spread on their own in the oven, you need to shape them.)

  7. Place them on a lined baking tray and bake for about 12-14 minutes.
