Shredded Chicken Tortilla Soup

This delicious soup takes only 10 minutes to prepare, (and 60-70 minutes to cook). It's easy, filling, and packed with flavor.


  • 4.5 cups water or chicken broth

  • 1 can diced tomatoes

  • 2 medium yellow onions

  • 5 cloves garlic

  • 1 tbsp chili powder

  • 2 tsp cumin

  • 1 tsp paprika

  • 1/2 tsp ground coriander (optional)

  • 1 tsp each of salt and pepper

  • 1 lb or about .5 kilos boneless, skinless chicken breast

  • 1 can black beans, drained

  • 1 1/2 cups frozen corn kernels

  • 1 Tbsp fresh lemon or lime juice

  • 1/4 cup chopped fresh cilantro (optional)


  1. In a large pot pour chicken broth, diced tomatoes, onion, and garlic and heat over medium flame.

  2. Add the chili powder, cumin, coriander, salt, and pepper.

  3. Add chicken breasts and lower flame to low and let cook for 1 hour.

  4. Remove chicken breasts and shred with 2 forks, then return shredded chicken to the pot.

  5. Add beans, corn, and lemon juice and cook for 10 more minutes or until corn has softened.

  6. Top with fresh cilantro, avocado, lime wedges, or tortilla chips and enjoy.
