Super Seed Schnitzel

I'm a sucker for a fresh piece of schnitzel right out of the oven. Instead of deep fried, refined-carbohydrate filled breadcrumbs that usually coat schnitzel, this mixture is free from gluten, flours, refined grains, and processed oils. The nuts and seeds actually add healthy fats, fiber, and protein this meal, actually making these chicken nuggets more nutrient dense than you would ever guess! Flax seeds in particular are one of my favorite foods to incorporate into my meals since they are so high in fiber and healthy essential fatty acids. Studies also show that flax seeds are particularly helpful for hormone balance because they help eliminate toxic hormones, regulate bowel movements, and help regulate blood sugar. I often add them to soups or smoothies, but this recipe is another great way to incorporate flax seeds into your diet.

Ingredients:

  • 1 lb or 1/2 kilo chicken breast filets

  • 1 cup ground flax seeds (If you can’t find pre-ground, just put whole flax seeds in a blender)

  • 1/2 cup almond flour

  • 2-3 tbsp white sesame seeds

  • 2-3 tbsp black sesame seeds

  • 1 tsp salt

  • 1 tsp pepper

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp paprika

  • 2 eggs

  • 3 tbsp olive oil, to coat

Instructions:

  1. Preheat the oven to 200°C or 400°F. I like to bake these on the convection setting because it helps the chicken get super crispy on the outside.

  2. In a large bowl combine all the seeds, almond flour, and spices.

  3. In a separate bowl, crack and beat the eggs.

  4. One at a time, take each piece of chicken and dunk it in the egg wash. Remove from bowl and allow the extra bit to drip down.

  5. Place the piece of chicken in the seed mixture. Use a spoon to make sure it gets fully coated on all sides.

  6. Place each fully coated piece of chicken on a making sheet lined with parchment paper.

  7. Repeat until all pieces of chicken are diced in egg and coated with the “breadcrumb” mixture.

  8. Use a kitchen brush to brush olive oil onto the tops of each piece of chicken. Bonus points if you do both sides, but I never do and it always comes out great.

  9. Bake for 20 minutes (again, bonus points if you flip in the middle but I never do)

  10. Enjoy!
