So fresh and simple but so delicious. This is a great side salad for spring and summer time.
1/2 cup black pearl cherry tomatoes (the red/green ones), quartered
1/2 cup red cherry tomatoes, quartered
1/2 cup yellow tomatoes, quartered
1 clove garlic, minced
3-4 basil leaves, thinly sliced
For the dressing:
1/8 cup olive oil
1/2 tsp dijon mustard
pinch of freshly ground black pepper
1/2 tsp white wine vinegar
juice from half a lemon
Cut all tomatoes into quarters. Add to a bowl.
Slice basil and add.
Mix all dressing ingredients and pour over tomatoes.
Let marinate in the fridge for 30 minutes.
