Cherry Tomato Side Salad

So fresh and simple but so delicious. This is a great side salad for spring and summer time.


Ingredients:

  • 1/2 cup black pearl cherry tomatoes (the red/green ones), quartered

  • 1/2 cup red cherry tomatoes, quartered

  • 1/2 cup yellow tomatoes, quartered

  • 1 clove garlic, minced

  • 3-4 basil leaves, thinly sliced

For the dressing:

  • 1/8 cup olive oil

  • 1/2 tsp dijon mustard

  • pinch of freshly ground black pepper

  • 1/2 tsp white wine vinegar

  • juice from half a lemon

Instructions:

  1. Cut all tomatoes into quarters. Add to a bowl.

  2. Slice basil and add.

  3. Mix all dressing ingredients and pour over tomatoes.

  4. Let marinate in the fridge for 30 minutes.

  5. Enjoy!
