Fudgy Chocolate Chip Sticks

This might be my favorite recipe of all time. Sometimes people tell me they wish they could live a healthier lifestyle but they can’t imagine giving up chocolate or dessert…who said you have to do either?? In fact, finding ways to indulge in the foods you love most is a huge part of maintaining a healthy lifestyle. The research is pretty clear that restrictive diets don’t help people in health or weight loss in the long term, so I’m very passionate about finding healthier ways to incorporate my favorite foods from my sugar addict days. For some people this might look like occasionally indulging in a regular cookie or treat. I personally feel much better (and my blood sugar levels are much more stable) when I don’t have any refined sugar or wheat flours, so creating a gluten-free, refined-sugar free version of my favorite snacks is the way to go for me.


I’ll be honest. Some of the desserts I make are good enough for me but I know that they wouldn’t be too popular with a crowd who isn’t health conscious.

These fudgey chocolate chip sticks are actually so delicious that you can make them for your family, kids, and friends and they’ll enjoy them just as much as any other treat! But unlike your average chocolate chip sticks, these are free from refined sugars and flours and the base of tahini paste ensures that you’re getting some protein and healthy fats from this dessert instead of blood sugar spike and crash.

If you’re someone who regularly eats sugar, you might want to be more generous with how much sweetener you use in this recipe. It’s still much lower than what you’d find in a typical chocolate chip stick recipe and is still free from the refined carbs of wheat flour (which essentially is broken down into sugars when digested). But if you’re striving for a sugar free lifestyle (it’s possible, I promise!) then feel free to use an alternative sweetener and stay on the lower side.


Ingredients:

  • 1 cup raw tahini paste

  • 2 eggs

  • 1/2 tsp baking powder

  • 1 tsp vanilla

  • 1/4 cup cocoa powder

  • 3-6 Tbsp sweetener*

  • 1/2 cup sugar free chocolate chips or a 100 gram 90% cocoa chocolate bar chopped up

  • Maldon sea salt flakes to top, optional


*Depending on your body's sugar tolerance and your goals, you can opt for a natural sweetener like honey or pure maple syrup (which contains more sugar) or a low calorie sweetener like monkfruit or allulose (won't affect your blood sugar as much.)


Instructions:

  1. Preheat the oven to 180°C or 350°F.

  2. Add tahini paste, eggs, baking powder, vanilla, sweetener and cocoa powder in a large bowl.

  3. Mix until just combined. The batter should be a rich, deep brown. Don’t overmix.

  4. Stir in the chocolate chips or chopped chocolate.

  5. On a parchment-lined baking tray, arrange the batter into a long, thin rectangle (it will expand in the oven).

  6. Sprinkle with sea salt on top.

  7. Bake for 15 minutes.

  8. Enjoy fresh out of the oven or freeze them for a deliciously cold treat!
