Meat Zucchini Boats

I thought this would be a cute spin on the zoodles with meat sauce dinner that is a regular in my dinner rotation, but OMG, it's whole different amazing situation. Baking the meat causes it to caramelize and crisp up and the zucchini is soft and almost melts in your mouth with the meat- I literally need to stop describing because I'm drooling on my computer. So just take my word for it, try this out because it's fab. Also it looks fancy and intimidating but it's actually even easier to make than zoodles because there's no extra equipment required.

Ingredients:

  • 2 Tbsp olive oil

  • 1/2 kilo or 1 lb ground beef

  • 1 oz ground liver, optional (I do this for the iron boost for me and my baby)

  • 1 yellow onion

  • 3 cloves garlic, minced

  • one 400 gram / 14 oz can crushed tomatoes

  • 3 medium zucchinis

  • 1 tsp salt

  • 1 tsp pepper

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp dried basil

  • 1 tsp parsley

  • 1 tsp oregano

  • 1 tsp thyme

  • a few leaves of fresh basil, optional


Instructions

  1. Preheat the oven to 200°C or 400°F.

  2. In a large sauce pan heat olive oil.

  3. Add in onions and garlic and mix until soft, about 10 minutes.

  4. Add in ground beef and optional liver and cook until meat browns.

  5. Pour in crushed tomatoes and let simmer.

  6. Add all spices together in a bowl and add to meat sauce.

  7. Cut zucchinis length wise and use a spoon to hollow out the middle- don't throw these out! Add them back to the meat sauce. #nofoodwaste

  8. Spoon the meat mixture into the zucchinis.

  9. Bake for 30 minutes, or until meat caramelizes and zucchini is cooked through.

  10. Garnish with fresh basil, optional.

  11. Enjoy!
