Rainbow Grilled Veggies

One of my favorite tips for clients who are looking to increase their veggie intake is to play the rainbow game. See how many different colored veggies you can eat every day and switch up the veggies throughout the week. Not only does the bright mix of colors make your dish look appetizing, but this is also an easy way to get a diverse range of antioxidants and micronutrients into your diet. So feel free to take this marinade and grilling method and use it with lots of other colorful veggies. If making these as skewers, feel free to add a few pieces of chicken breast or boneless thighs to the skewer as well. This is best made on a bbq grill or grill pan, but can also be roasted in the oven and broiled at the end to get that nice crisp.


Ingredients:

  • 1 red bell pepper

  • 1 yellow bell pepper

  • 1 green bell pepper

  • 1 orange bell pepper

  • 2 red onions

  • 5-6 wooden skewers, optional (not really an ingredient, but listed here so you'll remember to add it to your shopping list if you want to make these as skewers)

For the marinade:

  • 1/2 cup olive oil

  • juice from half a lemon

  • 1 tsp granulated garlic

  • 1 tsp onion powder

  • 1 tsp salt

  • 1/2 tsp freshly grated pepper

  • 1/2 tsp dried thyme

  • 1/2 tsp dried basil

Instructions:

  1. If making with wooden skewers, soak the skewers completely in a shallow pan filled with water for at least 30 minutes. This will help the sticks not burn.

  2. Combine all marinade ingredients in a bowl and mix.

  3. Chop veggies into 1-inch x 1-inch pieces and add to the marinade bowl.

  4. Ideally marinate in the fridge for 30 minutes, but if you don't have time I won't tell anyone.

  5. Arrange on skewers in rainbow order.

  6. Heat grill to 200°C or 400°F and cook for 7-8 minutes per side, or until you just start seeing the black lines. Note, if you added chicken to the skewers, this may take a few more minutes.

  7. If cooking in an oven, bake at 200°C or 400°F for 12 minutes per side, then flip and bake for another 12. Then turn the oven to the broil setting and cook for 4-5 more minutes.

  8. Keep them on the skewers for a barbecue vibe, or remove and plate them for a more classic look.

  9. Enjoy!
